RECIPE: PUMPKIN ICE CREAM PIE

Just in time for Thanksgiving, this recipe is a twist on the traditional pumpkin pie. If anyone makes this, we’d love to hear how it turned out!
PUMPKIN ICE CREAM PIE
3 cups of Turkey Hill Vanilla Light Ice Cream, softened
3 large eggs
1 ¾ cups fresh pumpkin (or 15-oz. can of solid pumpkin)
¾ cup sugar
½ tsp. salt
1 ½ tsp. pumpkin pie spice (or ½ tsp. cinnamon)
additional cinnamon (optional)
2 9″ pie shells (not deep dish)
In a medium mixing bowl, beat eggs slightly. Stir in pumpkin, sugar, salt, and spice. Add softened ice cream and beat until smooth. Pour into pie shells. Sprinkle with additional cinnamon if desired. Bake at 425* for 15 minutes, then reduce heat to 350* and bake 30 minutes more. Cool on racks for two hours. Chill before serving.

November 20th, 2007 at 5:27 pmMy mother-in-law, use to make a similar recipe, only instead of pie crust, she used ginger snaps, and lined a oblong baking pan with these, on the bottom, and on each side, I can’t remember if there were eggs, but I remember a faint taste of nutmeg, and I don’t remember if the mixture was cooked, or baked, I think she use to freeze it as, it was pumkin flavored icecream. Sad to say this is one recipe, I didn’t get, and I really enjoyed it at thanksgiving time.

Here’s a tip for you: To make the degree symbol”º”; all you have to do is type in 350 then with your left hand hold down the alt key and type 167 on the number pad on the right of your keyboard. November 24th, 2006 at 7:36 pmAhh, a pumpkin would be nice and it’s been considered. It didn’t make the cut, but we do have Egg Nog, Rum Raisin (now year round) and Peppermint Stick ice cream.
