RECIPE: ICE CREAM BAKED POTATO

This is a fun one that comes to us from the Food Network website. It’s basically ice cream rolled in cocoa powder to look like a potato and then topped with “sour cream” (whipped cream), “butter” (frozen squares of yellow frosting) and “chives” (chopped pistachios).

• 1 pint vanilla ice cream

• Cocoa Powder

• Whipped topping

• Yellow frosting

• 1/4 cup chopped pistachios

DIRECTIONS:

1. For the “butter” frosting:

Line the inside of a cover of a butter dish with plastic wrap. Fill the cover completely with yellow frosting and freeze until hard. Lift the “butter” out of the cover using the plastic wrap. Cut into squares.

2. For the potato ice cream:

Have a sheet pan covered with plastic wrap. On 1/2 of the pan, place the pint of ice cream down on its side. Fold the plastic over the ice cream and make a seal. Using your hands, quickly form the ice cream into a potato shape. Then, create a wedge across the length of the potato. Tightly twist the ends of the plastic wrap and make knots at each end, like a mozzarella ball.

3. Place the ice cream in the freezer until it hardens, about 20 to 30 minutes.

4. Remove the ice cream from the freezer, unwrap and dust all over with cocoa powder. Fill the wedge with whipped topping and place a pat of “butter” frosting on top. Sprinkle with pistachios and serve immediately.

While in Germany we used to buy Spaghetti Ice. It looked like a plate of spaghetti but it was an ice cream sundae. First there was a mound of whipped cream in the center of the plate. This was covered by softened vanilla ice cream that was squeezed out of a potato ricer to make it look like spaghetti. Then instead of tomato sauce there was strawberry sauce and a little bit of grated white chocolate took the place of cheese. It was amazing!!!

Geez what a neat treat. Sure beats the real potato in my opinion. If there were no Turkey Hill ice cream I would never have a good night as have my bowl of it every night. That is what makes me say GOOD NIGHT to my family. Just one problem I can never make up my mind what flavor I like best. I love them all!!!

I’ve used three different size scoops and mafe snowmen

Use three different size measuring scoops
Snow man lays down and you can use ice cream topping for his scarf, pretzel sticks for his arms and what ever favorite candy for nose, eys and mouth put a candy top hat on and he is cute a a button

The birthday party is on! I am late posting today as I was out and about looking for Party Cake Ice Cream! Found it. Had to go about 30 miles, but that’s no matter.

Spent the day shopping and cake baking, so tomorrow will be peanut butter and jelly cakes (my son’s favorite) and Party Cake Ice Cream. Can’t wait to try it!

Cute idea. We make all kinds of things out of cake. Why not ice cream? I have made cakes to look like clowns,cars, hearts,etc. All it takes is just a little imagination. Who knows what we can come up with if we just put our minds to it!
