Julie S. from Philadelphia, Pa. asks:
Hey Dr. Ernie,
How does the soft serve in the Duetto ice cream not freeze up like the regular Turkey Hill ice cream? Just curious. Thanks!
Hi Julie. I should preface my reply by clarifying that I’m not a doctor (my white lab coat might lead you to think that though). I guess you could say I’ve got an unofficial PhD in ice cream making.
Regular soft serve ice cream is made and served at about 18 degrees F. The packaged ice cream sold in grocery stores is made at about the same temperature but “hardened” by going through a minus 40 degree Fahrenheit tunnel. It then remains stored at a much colder temperature so it can travel and maintain its quality. Without this trip through the “deep freeze,” traditional soft serve just wouldn’t stand up in the freezer.
So how do we make our Duetto soft serve scoopable? The truth is, the formula took us a long time to perfect, which is why it’s a closely guarded secret. It’s also why Duetto is one of the only soft serve products available in stores. We’re pretty proud of that distinction and we hope you enjoy eating it as much as we enjoyed creating it. I know that’s probably not the answer you were hoping for, but you have to admit, eating foods made from a “secret recipe” is kind of fun, isn’t it?
Thanks for your question!
Ernie

Thanks Ernie. Hope your National Ice Cream Day went well. Yesterday we stopped at an ice cream stand and I tried “Buttered Popcorn” ice cream. It was “interesting”.
I have had your Duetto and let me tell you it is much better served soft from the softserve machine than from the box frozen.
we were at Dorney Park and they were selling it there.
it was fabulous.
thanks for a great combination.
I have tried the Duetto too and it is very good. It’s perfect especially for summer. Fruity and sweet, nice and light, a refreshing treat. I have tried so far only the cherry. I am eager to try the other flavors. I have to drive a bit to get it also, they don’t carry it at the local grocery.
I can keep the pace with Duetto, it’s low-fat! Even better…
My family loves Turkey Hill ice cream. I use the frozen yogurt in smoothies. Yum! My husband enjoys a bowl of Black Raspberry. Also, I love a tall glass of Turkey Hill Green Tea every day. It’s the best. I even turned my husband on to it. He’s hooked too. Thanks for great products.
I have’t tried the Duetto yet, but will soon. I didn’t realize that it is soft serve in texture. I have a few coupons for it, my next trip out I will be picking up a few!
The Cherry Duetto is great! Mango is good if you like tangy tastes. I haven’t tried lemon or the mixed berry one.
We’re glad you guys like Duetto! And to those of you who haven’t had it yet, we’re happy to hear that you’re eager to give it a shot. After you try it, let us know what you think!
I have tried all the Duettos. I really like the soft serve ice cream. Please start selling it by itself! I would buy it all the time.(In addition to all our other T.H. favorites.) If you could make it in Chocolate or Neopolitan also, I would be in heaven!! I celebrated Nat. Ice Cream Day with Mango Duetto and Moosetracks. Keep up the good work!
I was going to possibly get some for vacation!! Cherry or lemon, of course. Does the lemon taste okay with the vanilla soft serve ice cream?
Also, [to the TH team] you should make Duetto with chocolate soft serve with different flavors. Now that would be interesting!!
P.S. Mint Chocolate Chip crazies unite!!!!!!!!!!!
Also haven’t yet tried it but will in the near future. Your answer was similar to IRS discribing how they decide who to audit.
KFC,Coca-Cola,and Bush’s Baked Beans…You are in good company with a secret recipe. Haven’t seen yours in my local store yet, but will keep my eye out for it!
The only problem I have is, this does not come in a lower fat or Fro-yo option. Could you make that, if you did, you might corner the entire light/fro-yo market…
Fresh fruit plus fro-yo is a new england treat. If you could outsell new england ice cream shops, that would be ridiculous.
I have tried Duetto. It reminded me of the creamsicles we used to buy as children…only better!
Thanks for your suggestion Jules. New England is one of the areas we’re looking to expand in this year, so we’ll definitely give this some thought.
Even though it doesn’t say it on the front of the container, Duetto is lower in fat than most regular ice cream flavors (almost half the fat) and is even lower in fat than some low-fat flavors!
I’ve tried all but the Mixed Berry Duetto and the Mango is my favorite!
I also have not yet tried the Duetto, but I am becoming more and more convinced that I need to get to the store and use my $1 off coupon I clipped from the Sunday News! I enjoy soft serve and I really like the idea of incorporating a chocolate soft serve into the mix…chocolate covered strawberry!
That is interesting, I always wondered about the difference between soft serve and hard ice cream!
Happy ice cream eating to all!
We have tried the Duetto and love it! It is a great summer treat. I seem to go back to the black raspberry ice cream a lot over summer. And, of course, I have Turkey Hill Green Tea every day. Last week I bought the green tea with mango by accident and really liked it!
Wow, know what I think would be great: chocolate soft serve with raspberry ice. I love the Mango Duetto.
JUST PLAIN AND SIMPLE WE LIKE THE RED ONE
It’s our favorite in the whole world; Duet, the way to go. Every night especially cherry and mango, WOW!!! Thank you again Turkey Hill!
We have the raspberry Duetto at home (my husband bought it) and I had no idea it was soft serve. I’m usually not a fan of fruity flavored ice cream. I prefer the more traditional chocolate, vanilla, strawberry, coffee flavors but I love soft serve. I’m going to try some tonight. If it’s as good as I think it will be I will also request that you sell just soft serve light ice cream or frozen yogurt. I’d buy it without a doubt.
Regular or soft sounds good to me!!!
Does your soft serve secret contain any wheat products? I have an allergy to wheat.
I luv luv luv Cherry Duetto.
Never discontinue it.
Makes my mouth very happy…
Thanx!
Thumbs up on Duetto!
Duetto is great! Not only are the flavors amazing, but the texture is perfect. Great job on your secret recipe!
I love your Duetto!!! I tried Mango first and would have just bought that, but a store was offering samples. I tried the cherry and was hooked. I drizzle chocolate on the cherry Duetto and it tastes like chocolate covered cherries I have every Christmas. What a treat!!! I love the soft serve. No more bent spoons.
Huh! We’ll have to try Duetto… My 5-year-old complains that regular ice cream is “too hard” and much prefers soft serve. (Don’t think she’s got sensitive teeth, but is just particular.
) So maybe she’d like Duetto!
Everyone seems so excited about Duetto…I am looking forward to trying one…
DAWN: Regarding Duetto and wheat. You’ll be happy to know that all of our Duetto products are gluten-free, which means they contain no wheat, rye, oats, or barley. Hope this helps. Let us know if you need more info!
I didn’t think anything could unhook me from my Rita’s Ice addiction… but this stuff is fantastic! The duetto’s are cool and creamy, and the fruity flavors are perfect for summer! Congratulations to the think-tankers at Turkey Hill! Job well done!
where is the win a trip for two
