RECIPE: ICE CREAM TRUFFLES
Posted by: Turkey Hill Team
Sorry about the lack of a post yesterday. The software we use to automatically post on the weekends must have had a hiccup. Hopefully this recipe makes up for it. It’s really just balls of ice cream rolled in various toppings, but it sounds fun and looks nice. Like most ice cream recipes it’s versatile too. Feel free to substitute various crushed up goodies for the malt balls, Heath bars or Pay Day bars. For a more upscale truffle appearance, we suggest using chocolate shavings or sliced almonds. You can also try dipping the ice cream balls in melted chocolate and then rolling it in the topping.
INGREDIENTS:
• 1 pint vanilla ice cream
• 10 malt balls, finely chopped (1/2 cup)
• 2 Heath bars, finely chopped (1/2 cup)
• 2 PayDay bars, finely chopped (1/2 cup)
• 10 ounces white chocolate
DIRECTIONS:
1. Line 2 small baking sheets with parchment paper or foil. Freeze for 10 minutes. Remove 1 sheet.
2. Using a melon baller, scoop the ice cream to form 1-inch balls and place on sheet. Return sheet to freezer.
3. Repeat this process with second sheet. Freeze the balls for 30 minutes.
4. Arrange the chopped malt balls, Heath bars, and PayDays on small plates. Working with 1 baking sheet at a time, roll the ice cream balls in the toppings, using your hands to gently press in the toppings. Freeze for 30 minutes.
5. For the white chocolate truffles, melt the chocolate in a bowl in a microwave or in the top of a double boiler. Dip the chilled balls, one at a time, into the melted chocolate. Remove with a fork, letting the excess chocolate drip back into the bowl. Freeze for 30 minutes.

If you’ve got a technical question about the ice cream making process or some other inquiry about the nuances of America’s favorite treat, chances are Ernie has the answer. He might not be able to answer all questions, but he’ll try his best and some may be featured on the Ice Cream Journal.

August 1st, 2007 at 9:17 amThis is a great quick and easy dessert and it is so good. I love to mix and match different ice cream flavors (Turkey Hill of course) with different topping combinations. These are great to serve when entertaining and they are bitesize so you can have more than one.

July 30th, 2007 at 4:17 pmThese is one of my favorite desserts to make, especially for a special dinner or event! Looks like SO much work, looks very classy, but it’s so deceptively simple! It only requires a little bit of pre-thought, but then come time for the event, dessert is already done and ready to serve – one less thing to worry about!
For an extra special twist, you can pipe a thin line of icing or melted chocolate over each truffle before freezing by putting about a half cup of the drizzle in a sandwich baggie, snip off the corner and go crazy cool with the design!
Enjoy.
July 30th, 2007 at 4:16 pmI MADE THESE FOR MY DINNER GUESTS LAST NIGHT.THEY WERE A HUGE SUCCESS’.THANK YOU SO MUCH FOR THE WONDERFUL IDEA.AN EXSCELLENT DESSERT ON A WARM EVENING.
July 30th, 2007 at 2:49 pmHmm…I don’t think putting them in melted chocolate and then in something else will work; won’t the chocolate harden pretty quickly once it hits the ice cream?
July 30th, 2007 at 11:43 amI THINK ICE CREAM TRUFFLES IS AN AWESOME IDEA, IT’S A NICE WAY TO ENTERTAIN COMPANY….
July 30th, 2007 at 11:41 am
I’m an ice cream truffler
Wouldn’t you like to be an ice cream truffler too?
Especially a “Turkey Hill Dairy” ice cream made truffler
July 30th, 2007 at 10:26 amWow what a day for Turkey Hill Ice cream and Teas. I have my fridge stocked up. Will try to refrain from eating a half gallon of Turkey Hill today, but it’s going to be hard not to indulge.
July 30th, 2007 at 10:23 amThese sound great and easy. I think I’ll try them with my kids. I’m ususally not a a fan of inclusions but I love malt balls and haven’t had them in years. This recipe sounds like the perfect excuse.

Mint Chocolate Chip right-hand people unite!!!!!!!!!
July 30th, 2007 at 9:38 amthis is a great idea. I’m not stopping with vanilla, I would like to use other flavors of ice cream too.
July 30th, 2007 at 9:10 amand why use just a pint.
that would never be enough for my family.

July 30th, 2007 at 8:58 amWelcome back Sarah! Sorry to hear that your search for the great Moobella ice cream making machine came up empty. If anyone finds one of those things, give it a try and let us know what you think.
As many of you mentioned, this recipe is very adaptable. There are lots of different things you can do to personalize it. We like Carol’s idea of using the little gold foil cups to take the “fanciness” to the next level.
July 30th, 2007 at 8:14 amToo bad you can’t buy these in the store.
July 30th, 2007 at 7:48 amGreat recipe! Thanks!!
July 29th, 2007 at 9:57 pmRecipe is a good one, so adaptable for any occasion.
This is not an ice cream question, but maybe Ernie or someone will know. Do you think Turkey Hill teas will ever come in six packs. Or some grouping of individual serving bottles? Would love to see the teas like this?
July 29th, 2007 at 9:45 pmI think these would look really fancy in gold foil cups.A whole malt ball in the center would be good. Then dip in chocolate and roll in nuts. You could also use chocolate ice cream and dip in chocolate. Then sprinkle with coconut. I could go on …So many possibilities.
July 29th, 2007 at 7:29 pmAs much as I love truffles I know i will like these.
July 29th, 2007 at 6:51 pmAny one know what you can do with dark chocolate with these?
I would add one thing to your truffle precedure. Before placing back in the freezer stick a sturdy tooth pick or swizzler in it to make it cleaner to eat.
July 29th, 2007 at 5:16 pmWow, you must have just posted this….
Anyway…… I’M BACK!!!!!!!!!!!!! Not that you care. I just felt like saying that.
My trip was great; thanks for asking. The only sad thing is we were only on a day trip to Boston, and I couldn’t find the Moobella things…. So sad [wipe tear from eye].
I will see you again soon. I am going back and starting where I left off.
See you soon as I will write a blog again.
