SECOND SCOOP: ERNIE AND HIS GIANT KNIFE

The following was posted on the Ice Cream Journal back in July. Ernie weilding a giant knife is worth a second look, isn’t it?
A while ago, CN8 brought their TV cameras to the Dairy to get an inside look at our ice cream making process. One of the segments they filmed was with Ernie. As many of you know, Ernie is our resident ice cream expert. He oversees the daily ice cream making operations here at Turkey Hill (you can ask him a question using the link on the right). He’s also our official ice cream taster. Yeah, he gets paid to eat ice cream.
One of the daily tests he does is a visual examination of the ice cream. To do this, he takes a very large knife and cuts the container in half to make sure all the inclusions (fudge, pecans, cherries, cookies, cookie dough, etc.) are dispersed evenly. If you’ve got a technical question about the ice cream making process or some other inquiry about the nuances of America’s favorite treat, chances are Ernie has the answer. He might not be able to answer all questions, but he’ll try his best and some may be featured on the Ice Cream Journal.

I finally found my favorite flavor, tin roof today in shoprite. I could only buy one, as it was the last box in the freezer. Next time I see Tin Roof, I will buy all that they have. I have a nice big freezer, so I can store a lot. I love your ice cream–it is the greatest’

January 21st, 2008 at 1:10 pmTH is great! even if I have to take Lactose tabs to enjoy it ….. I have had some other LAcotse Icecream not so good ……… TH is best even if the Lactose pill comes first……. Perhaps the R & D division can experiment with lactose reduces product and have something for summer.

HOW MANY OF YOU ARE LACTOSE INTOLERANT AND STILL DEMAND TO ENJOY YOUR TH?????
I happen to be, and have to live off of lactaid to enjoy my TH successfully. I wonder how many people out there have these issues? I think Lactaid and TH should merge so we can enjoy both worlds…. any takers???

LISA - Yes, someone finally claimed the grand prize. A year’s supply of ice cream for the average person might not last long for an ice cream fanatic though!

He reminds me of my dad (who really loved TH ice cream). I can still see him sitting in his recliner with a big bowl of TH ice cream and a spoon. Thanks for the video.

January 18th, 2008 at 12:36 pmB) When you increase your production of Peaches and Cream this Summer, please improve its flavor. When my parents made it at home(back in the ’30’s - I’m 84)they added a little lemon juice. I was very disappointed in your 2007 recipe - almost flavorless.
