DORIS L. ASKS: “How many strawberries go into one gallon of Strawberry Ice Cream?”
Great question, Doris! I’ll try to answer it, but I don’t think I’ll be able to provide an exact number.
We use 30 pound (3 gallon) containers of strawberries when we produce our ice cream. The strawberries are placed into a feeder and are then fed into the ice cream mix during production. There’s a bit of variation in the process, so I would imagine there’s not a precise amount of strawberries that make their way into each and every container (but every container has plenty!).
While I can’t share the exact formula for Turkey Hill Strawberries & Cream (the competition would love to know!), I can tell you this: nearly 25 % of the product is directly related to the flavor. We use fresh strawberries which are cleaned, hulled, halved, and sugared just prior to being packaged and frozen for use at a later date.
The berries are kept frozen and thawed right before they are placed in the ice cream. This process allows us to separate the juice from the berry. The juice is used as the flavoring agent and the remaining berries are added to the ice cream after the ice cream is partially frozen, just prior to packaging.
Hope this helps and thanks for your question!
Ernie

If you’ve got a technical question about the ice cream making process or some other inquiry about the nuances of America’s favorite treat, chances are Ernie has the answer. He might not be able to answer all questions, but he’ll try his best and some may be featured on the Ice Cream Journal.
I remember as a child when my mother bought frozen strawberries the best part was the syrup. Now I know how the syrup is formed is when they thaw. My question now is in June, July when strawbwerries are in season do you still use frozen ones or have a way to get the juice out of fresh ones?
YUMMY!
GO! Chocolate Peanut Butter Cup!
Thanks Doris L. Great question!!! Thanks Ernie for the tasty answer!!!
Go German Chocolate cake!!!!! Just wish I could taste it…. =)
Thanks for going the extra mile and always responding to your customers. I know we all have our favorite flavor of Turkey Hill, so my question for yu is what is your favorite Turkey Hill flavor?
It’s great to know that you use real fruit. My husband used to be allergic to frozen strawberries. Now he’s not.
Does Turkey Hill do fundraisers for churches?
CAROLINE – We use the same process during the summer. It works so well and the strawberries still taste great!
LORI – We’re involved in a lot of fundraising and philanthropiic causes throughout Lancaster County and beyond. Drop Ernie an email via the “Ask Ernie” link near the top of the blog and let him know if you’ve got anything specific in mind.
I love fruit just not in my ice cream. I used to love things in my ice cream but now I’ll only eat ice cream without any mix ins.
I love (and eat almost every night) Turkey Hill Light Vanilla Ice Cream or Turkey Hill Vanilla Frozen Yogurt. What more can I say except THANK YOU.
Thanks so much for all the great Ice cream info.
Go Raspberry Duetto!
Who knew there was so much science behind our delectable desserts? Yes, I much prefer the whole/halved strawberries in my ice cream, and not just strawberry FLAVORED ice cream…
I”ve never looked, but does ice cream have an expiration date on it and if it does,,, what happens AFTER that date? I know if it’s kept long enough, it gets gooey or gets ice crystals in it,, but are there any health hazards to eating expired ice cream? (like that happens very often!lol)
Turkey Hill uses the freshest ingredients that is why is soooo good!!!!
you put some pretty good berries in your cream . who ever selects them, does a good job; berry good
YES! Turkey Hill is the VERY BEST Ice Cream and I always have some in my freezer. I love the smooth texture and creamy flavor of the Chocolate Peanut Butter Cup. It’s my all time favorite
Strawberry Ice cream was my grandfathers favorite flavor!!!!
Strawberry was my grandfathers favorite flavor!
~Okay so I’m extremely excited!!
~I finally got my hands on the Special Edition TH “Box of Chocolates” and I must say I’m truly in Love!
~It’s a delectable milk chocolate ice cream with little chocolate pieces running through it as well as little chunks of different type of chocolate candies.
~It was by far DELICOUS!!!! I have found my new favorite flavor, and just as soon as the freezer lighten’s up I’m gonna stock up before they go away for the season!
~Thanks TH for an amazing flavor!!
SUE – Yes, ice cream does have an expiration date and it is located on the bottom of our package. The ice cream will begin to get gummy or icy closer to the expiration date, this process will be faster or slower depending on how it was handled. Ice cream in our freezer is eaten so fast that it never seems to stick around long enough to come close to the expiration date!
STEFANIE – Everybody has a different flavor that they love(needless to say this Ultimate Flavor Tournament has cause quite a bit of friendly arguing around here). Our favorites change from day to day(and even minute to minute), but we all love Turkey Hill!
I want to thank you for the coupons for Turkey Hill products on your free calendar. It is a delicious way to enjoy the savings all year.
Now I know why I really enjoy TH Strawberry Ice cream!
It’s the first day of spring, just made for celebrating Raspberry Duetto.
Chocolate peanut butter butter will be the winner it satisfies the chocoholics and the peanut butter nuts.
Chocolate PB Cup – gotta be a winner!
Black Raspberry RULES!!!
Can’t wait to see which flavors make the final four of the Turkey Hill Ultimate Flavor Tournament. I’ll stock up on those so I can say I have the tournament winner in my freezer.
Interesting to find out how strawberry ice cream is made, even though it’s not a favorite.
I’m usually too busy with 3 young ice cream lovers on the weekends to check the blog. This is my check in and I’m thrilled to see some of my favorites holding on to their leads.
What could be more “natural” than your strawberry ice cream. I now know why it is REALLY my favorite!

***ROBBIN L. NETZ: Sorry to say but I found it in NJ (Laurel Springs to be exact). Have you ever found the German Chocolate Cake in Bucks County? Looks like Box of Chocolates was out for February, but it seems that my SHOPRITE has only just started to carry it. So I was extremely surprised! I hope you find it!!!
We just celebrated another family birthday…a perfect excuse for having 4 more cartons of ice cream in the freezer!
Neopolitan won this time around, we polished off 2 containers last weekend!
Chocolate PB Cup is the BEST!
My dream job is to taste test new ice cream flavors. I’ve been told God will give us the desires of our hearts in Heaven, so I can’t tell you how many times I’ve prayed that endless delicious bowls of Turkey Hill await me in eternity!
GO CHOC PB CUP!
Donna: Where did you get your Turkey Hill calendar?
I’m back to see the Monday standings. My husband watches TV and constantly checks the NCAA scores and I rush to the computer to see the ice cream competition.
I can’t believe the match up this week. All I know is I was never a huge plain Vanilla fan but now I literally eat it every night. I’m very interested in seeing if Vanilla is the ultimate winner.
With so few votes in I’ll have to check back later in the day and throughout the week. I struggled with the choices today and I’m curious if other will as well.
To those looking in Bucks County for the Box of Chocolates Flavor go to Wegmans Market in Warrington Pa I was just there on Tues March 25th and saw it there and they have a great selection of flavors. After you are done in that Dept visit the Health and Beauty section also they have a big selection. Meantime Go Chocolate Peanut Butter Cup as peanut butter is a great source of protein and we lovvvvvve this flavor in our house and besides Turkey Hill wins over all other icecreams!!!
Love the orange & vanilla ice cream, and the raspberry but my all time favorite is still Tin Roof Sundae!!!! Keep up the good work!!!
STRAWBERRY ICE CREAM IS PERFERT IN EVERY WAY;TEXTURE SUBSTANCE AND VOLUME AND TASTE;;100% THE BESTIN THE WORLD;
Hi Ernie…..per one of your comments “But I still make room for ice cream by treating it as a reward to myself”. Why is ice cream used as a reward? Why can’t a reward be healthy and substituted with raw fresh carrots, etc.
I purchased neopolitan ice cream with an expiration date of 8-31-09 yesterday. Can ice cream still be fresh after 11 months?
I am a huge fan of vanilla soft serve ice cream. What is the closest Turkey Hill type to that?
