Not long ago, Turkey Hill’s “Einstein of Ice Cream,” Ernie Pinckney, was a guest on the Saucy Sisters radio show. The Saucy Sisters – Barbara and Beverly – mainly focus on wine topics, but stray a bit sometimes to include topics like ice cream. Below is a transcript of their conversation with Ernie. Enjoy!
BEVERLY: Many of you have written to ask us, “How in the world did you get so lucky to be a Saucy Sister?” Well, you drink all day and you taste foods from around the world. We think we’re pretty luck girls. But there’s someone else who has the edge on the “Best Job in the World.” He’s Ernie Pinckney, and he’s the official ice cream taster for Turkey Hill ice cream.
Ernie grew up on a dairy farm and he’s been tasting ice cream, well, for a lot of years. And he’s joining us today from Turkey Hill’s headquarters in Lancaster, Pennsylvania. Hello Ernie!
ERNIE: Hello! How are you?
BEVERLY: We’re just doing great! How are things up there in that beautiful part of Pennsylvania?
ERNIE: It’s actually beautiful today. The sun is shining, the rain has stopped and we’re waiting to get outdoors.
BEVERLY: Well, we won’t hold you up. Earlier in our program, Barbara was talking about tasting ice cream. And she can’t just take a spoonful, she has to eat a whole half gallon.
BARBARA: And there’s something wrong with that?
ERNIE: Sounds good to me!
BEVERLY: How in the world do you taste all that ice cream?
ERNIE: Well, we do very small amounts at a time, using a very small spoon, and we place it on our tongue and swirl it around in our mouth and get that official taste from it.
BARBARA: You know, that sounds very much like wine tasting. Beverly and I conduct wine classes and we have people in our class swirling (the wine) around in their mouths as well. Is it the same kind of thing?
ERNIE: It’s pretty much the same. We’re using the same taste buds, just a little different spots on our tongue, but we’re actually trying to do the same things you would when you taste wine.
BARBARA: And you have a group, right? A tasting panel? How many are in the group and how many ice creams do you judge at one time?
ERNIE: Well, we start out with two or three people developing the initial flavor and then once they get it to the point where they think they can turn it over to the panel, it could b e anywhere from seven to 10 people that would come in and do the tasting of the particular product.
BARBARA: Now are these people from the community? I mean, if I were up there, could I be invited?
ERNIE: Oh, you could be invited. We generally start within our own associates, but from time to time we also go on the outside and make it available for other people to try.
BARBARA: And who is it that actually comes up with the ideas for new flavors?
ERNIE: Well, we have an R&D center. Two people in there who are working with the public. People like yourself who might be writing to say that this is your favorite concoction for ice cream. (They also work) amongst themselves, with our associates and, of course, with vendors who are trying to promote their product for us to use in our product.
BARBARA: You know, I had mentioned that Beverly and I do these wine classes, and there are a group of people that are called “super tasters” that we talk about in our class. You’ve been tasting ice cream for a long time. Are you among those people who really have acute taste buds or is it a learned technique?
ERNIE: It’s learned, but you also have the super tastebuds. You do some actual tastings – not ice cream – but in advance to see if we can pick up the sweets and the sours and the salts and the acids. You need to do that also to look for your strength in tasting. And if you’ve got a good balance, then you can pretty much taste any of the products we would be making.
BARBARA: Beverly used to live in your area, or at least close by in the Philadelphia area, so she knows Turkey Hill ice creams really well. I have not had as much experience with them, but she’s such a smart pants. She thinks she knows everything…(laughs)
ERNIE: She does!
BEVERLY: I do, but we have this wacky food quiz on our show where Barbara and I challenge each other, but unfortunately, Ernie, I am in the hold by four questions, so I might need some of your help here. But why don’t you give us a test here on some ice cream knowledge?
ERNIE: Well, we’ll get a little specific. We make close to 30 million gallons of ice cream a year at Turkey Hill. I’m sure that you’re in the country now, and you should be able to give me the answer to this: How many cows would it take to produce the milk and all the various dairy ingredients that go into making our 30 million gallons of ice cream?
BARBARA: 30 million gallons!
BEVERLY: How many cows? Math was never my…I’ll take a wild guess. 30 million (gallons)? Two thousand!
ERNIE: Okay.
BARBARA: Oh, let me see if I can come closer…
ERNIE: You’re within a bread basket away. We want to get it down to a lunchbox before I say okay.
BARBARA: How ‘bout…500.
ERNIE: Well, we’re going the wrong way. How about almost triple it. Two-and-a-half times what you said. Somewhere in the 1,500 range.
BEVERLY: Oh my goodness. That’s amazing. 1,500.
ERNIE: Sure. And maybe we’ll make it a little bit easier for you. How many servings of ice cream would that be?
BEVERLY: Well, it depends whether it’s for the average person or if it’s Barbara’s servings.
BARBARA: If it’s a half gallon at a time, that makes it 60 million…no wait. The other way.
BEVERLY: You want to divide, Barbara, not multiply. (laughs)
ERNIE: You had it right. 60 million would be right. I was looking more for the official serving size for that.
BEVERLY: Oh my, so a regular serving is four ounces then.
ERNIE: It’s close to 830 million servings.
BARBARA: That’s a whole bunch. As a matter of fact, the cow question…what I love about Turkey Hill is that the cows are right there because it’s farm country.
ERNIE: Yeah, that’s unique. Lancaster County in Pennsylvania is the largest agricultural producing county in the state, and that’s located about 90 miles west of Philadelphia right along the Susquehanna River. Our supplies come from within roughly 40 miles of the plant, so you’re absolutely right. Being where we are is what makes it good.
BEVERLY: Yeah, it is good stuff. Well thank you Ernie for being with us today. We’ve been talking with Ernie Pinckney who is the official ice cream taster for Turkey Hill ice cream. So I had always thought that ernie had the best job in the world. But when I envisioned him conducting his ice cream tasting, he was sitting with a bowl full of each flavor on his lap. He certainly was not eating a small amount with a miniscule spoon! I now don’t think I would have the patience to restrain myself from devouring all the ice cream. Since I have never found any turkey hill flavor that I do now like (certainly I have preferences, but none that I would object to having a bowl full of), one spoon would be a terrible tease. Ernie, do you at least get to take the full cartons of these ice creams home with you at night to “rethink” your opinion or “sleep on it?” I would make sure that that was a clause in my contract before taking the job because I simply would not be satisfied with just one spoonful of a taste. But I guess perhaps my palet needs some more refining. Im only in my 3rd decade of life right now
Do you ever need any guest taste testers at Turkey Hill? Or anyone to film a commercial or an advertisement? I would be more than willing to help you out with that! Maybe even a blindfolded flavor tasting contest! That would be a new fun idea for Turkey Hill next national ice cream month. Also, I just learned yesterday that National Dairy Month is June, so really, we should be feasting on ice cream for 2 whole months since ice cream is largely considered in the dairy food group.

Ice cream tasting sounds like a great job but I wonder, Ernie, if you ever get sick of tasting ice cream. Hard to imagine for most of us but if I had to eat ice cream all the time I might get tired of it. Want to share any weird flavors that were tried and never made it to production?
Why not combine wine with ice cream? I like vanilla ice cream topped with canned cherry pie filling which has been flavored with a touch of port wine.

Here’s a suggestion for a “Christmas Promo” ……. Make a “Peace on Earth” commercial and have Turkey Hill Chocolate Peanut Buter Cup Ice Cream as the focal point. Eating it slowly truly gives me “Peace On Earth” for a short time.

I was born and raised in Lancester. Always eat Turkey Hill products. When I married we moved to NH and no Turkey Hill products. Now is the last year or so we can finally get Turkey Hill products. My family are I are very pleased! Keep up the good work!

I grew up in Upstate NY and my dad owned and operated a service station and we lived next door…so I played and grew up in the station…favorite thing to help dad do? I got to sample new ice creams when they came in! He had a reach in cooler that had at least 10 different kinds of a local ice cream and various ice cream novelties..wow, it’s a wonder my cholesterol isn’t high now, for all the wonderful ice cream I ate then(AND NOW TOO, OF COURSE, WITH ALL OF YOUR TURKEY HILL FLAVORS!)

The worst part of an ice cream tester’s job would be leaving for the night.
What a wonderful job to have but I don’t think I could do it because I know I wouldn’t be happy with a little spoon-ful at a time. I’d have to taste a lot more than that to give my opinion so I guess it is something you have to learn and like anything else, it takes hard work to become a pro like Ernie.

I love eating the Turkey Hill ice creams that have passed the taste tests with flying colors, but I think it would be fun to taste all the combinations that never quite made it for whatever reason. I’m betting there are some flavors that while not likely to be mass market favorites might have been uniquely wonderful!

I read one time that Baskin & Robbins once made a special batch of ketchup flavored ice cream for a particular ketchup freak they knew. Unfortunately, even he did not like the taste and it all went down the drain.
I hope that Turkey Hill special flavors keep coming-I love trying all the new ones!
Ice cream tasting would be fun, but I wouldn’t want to stop after one little taste. Especially if I really liked that particular ice cream, I would want more and more. That could become a dangerous job for the waisline!

I agree with everyone – an ice cream taster is a great job but then what do you do on the weekends. Maybe have some more ice cream. The Saucy Sisters certainly strayed far this time – from wine to ice cream. But you can’t go wrong talking about ice cream which is something most people enjoy.

Ernie has the best job in the world, I would think. I do my own taste testing. Every time I buy TH, which is every week, 4 containers sometimes more depending on the new flavors. When I get them home, I take the lids off of all of them, because the ice cream sticks on the lids, and I eat it all off. I then wash the lids and put glad wrap on top, then the lids. I don’t want to waste any of the wonderful TH ice cream. I do use a separate spoon for each flavor and never double dip off the lids just one good swipe is all it takes. LOL.. Linda
I just want to let everyone at Turkey Hill know (they should already!) that they have the BEST Ice Cream on the market. We are SO fortunate here in Connecticut to be able to purchase Turkey Hill. It is our favorite and we will continue to be loyal customers.

Last year at one of our annul BBQs we bought an ice cream cake from one of you competitors to celebrate 3 members hitting a decade year. It was inscribed “Happy 160″ with their names. This year I finally found the TH cake in my local store with a $3 off coupon on it. I took it to the bakery department to inscribe it with “Happy 163″. You should of seen the look I got until I asked for the 3 names on it. Last year there was some left but this year with TH a few went back for more and more would have if there was more. I never got so many complainants for an ice cream before. Thanks for the quality.
I always have ice cream in the house. My husband and I will stop for ice cream whenever we are out riding on our motorcycles. I love all the googy good stuff in ice cream. This house is an ice cream house.

I love Turkey Hill Ice Cream. It has a nicer feel to it than other ice creams that tend to crystalize right away. My favotie is Vailla because you can dress it up any way you want. I wonder what Ernies’ favorite is. The Siters didn’t ask him that….
When I first met my husband he said “ice cream makes me happy” I had no idea how true that was and that to keep him happy I just have to always have Turkey Hill in the freezer. Thank you for helping me keep a smile on my darling husband face.

When I was a freshman in high school, there was a speech class, and my girlfriend and I would listen in, and they would keep repeating; “you scream, I scream, we all scream for ice cream”! I’ll never forget that, we thought it was so funny!

Ernie has a great job. I love Turkey Hill Ice Cream. I have my whole family eating it. So our freezer is always filled with a variety. I even mix some together. You should try Rocky Road mixed with Butter Pecan. That is a real treat. When the sisters stop drinking wine, they should start eating Turkey Hill Ice Cream. That’s what I did when I stopped drinking over ten years ago.

I have to tell you (Ernie) I wouldn’t mind being the tester for the TH ice cream cakes. I bought one for my 82yr. old brother birthday which is this Fri., but now I have to go buy another one, because when I brought it home I had to taste it and I ate a pretty big slice of it. Ernie, they are great. I got a coupon for $3.00 off of another one, which is a big help. I only hope I don’t cut it until Fri.LOL. Linda

There is a time and a place for both wine and ice cream and tonight I have found them both. Life is good!
How many farms does it take to supply Turkey Hill with 1500 cows for their yearly supply of ice cream? That is a huge undertaking to milk that many cows twice a day! Better yet, how far away do you send your 30 million gallons of ice cream?
hoped we would get more flavors in the Detroit area—no yogurt at all yet!!!!! and it’s almost the end of National Ice Cream month !!!!! Oh my !!!!

my family love your ice cream so much we keep 6 in our freezer at all times. with 6 kids and 10 grandkids it does not last long at all. its the only kind they will eat.
I think TH should advertise its local sourcing more. It is impressive that all supplies come from within 40 miles of the plant. Buying TH not only supports the local community, but it is “greener” too!
Mmm, taste testing ice cream! What a wonderful job that would be! I run my own taste testing here at home and so far,, none of the TH flavors have failed! lol
I think we have Cheryl beat ~ we keep 4 Turkey Hill Ice Creams in our freezer and there’s only two of us! My favorites being Chocolate Cherry Cordial and Chocolate Marshmallow.

I hope you have enough black rasberries to make some good ice cream. They are so good the local deer are eating them before I have a chance to pick them. Hoping that I get them in your good ice cream.
Tomorrow is my dog’s 10 birthday and we both are celebrating it with any flavor he choses because “He’s the Man” and spoiled rotten!!!! Scooter and I both love every flavor there is at Turkey Hill—-so this will be no problem !!!

My Basset Hound, Jersey, would make the best ice-cream taster. He has very discriminating taste. Of course, chocolate would be off limits for him.

Hi Ernie, I remember the song “You scream, I scream, we all scream for ice-cream.” And it can only be Turkey Hill icecream. A nice young man at the Shop Rite store where I shop finally ordered Rum Raisin ice-cream. That made me so happy, and my husband says we can’t fit any more ice-cream in the freezer. Ha Ha And, I would love to taste test all of Turkey Hill ice-cream. Yummy

I think I wouldn’t like to be an ice cream taster. It would make tasting ice cream too, well, business oriented. Would this ice cream appeal to enough of a market to sell the entire production run? Or at least enough of the production run to recoup the costs of it, although break-even isn’t ever the objective, profit is. I’d rather just enjoy ice cream for the sake of it. Yum!

I have a problem….I like Turkey Hill ice cream but my kids don’t….
TH is delicious! I keep at least 5 different flavors in my freezer at all times. When I eat ice cream, I put a scoop of each flavor in one large bowl, and have the treat of a lifetime!!
I love your ice cream cake, got one for my daughter-in-law’s birthday. The icing was marshmellowy and flavorful, not like the “other” cakes with dry tasting icings.
It is a beautiful area around Turkey Hill. No wonder the ice cream is so good. Happy cows.

We have just returned from wintering in Fla. First thing I did was get a gallon of Iced Tea and a half gallon of your ice cream. Still miss the cocoanut ice cream and the iced tea that is relaxing – forget what it was called but it was a good calming brew.
