ASK ERNIE: HOW DO YOU CHOOSE LIMITED EDITION FLAVORS?

DEBBIE V. OF QUAKERTOWN, PA ASKS: Just how does one go about suggesting a “feature flavor” for Turkey Hill, and then how does Turkey Hill decide on what the Feature Flavor will be each month?

ErnieHeadshot3Good question, Debbie. We do a lot of research to decide the best “Featured Flavors” to create and when to release them. Once we agree on a flavor, we make it and then do several rounds of taste tests to make sure the recipe is just right.

Sometimes we take ideas from customers and ice cream fans like you. Our flavor development team (yes, there’s really a team) is more than happy to hear from customers about potential new flavors. Do you have any ideas in mind?

- Ernie

DEBBIE RESPONDS: Ernie – Thank you for taking the time to answer my question.  I often thought about “Peanut & Butter Jelly” flavored ice cream, wondering how peanut butter and strawberry would taste in ice cream. What do you think? I also think a flavor that’s exploding with coffee flavor would be great, kind of a cappuccino with chocolate covered coffee beans in it, whipped cream, and caramel.

(ERNIE’S NOTE: Both flavors have potential! I’ll pass the ideas along to the team. I’m especially curious about the PB&J idea!”)

I love the coffee explosion idea but would substitute marshmallow for whipped cream and DARK chocolate for the caramel. Just a suggestion while you’re experimenting!

  2. Sara B. says:

Coffee with caramel sounds terrific. In high school I worked at a dairy bar where they made their own ice cream. Around Halloween they always made licorice ice cream and it was a great hit. People waited all year just for a cone of it.

  3. Sheryl says:

Hi everyone, Yes I have some good flavor to add. Strawberries and blueberrie mix with vanilla ice cream, Lima and Lemon ice cream with vanilla ice cream, walnuts and blueberrie ice cream, and eggnog ice cream with chcolate pieces in it.

I like both of those suggested flavors! I’d also love to see more added to your all natural line

  7. Carol Triano says:

I just want to comment that however you and the team reach a decision for a limited edition flavor, that they are all excellent and there is always a flavor for everyone to enjoy. Keep up the good work Ernie.

  8. Karen says:

I’m not one for mix ins but would love a light coffee flavor. Not one for the record books or a limited edition just something I’m looking to purchase weekly.

  9. Bob Kessler Jr says:

There is probably no end as to ideas about ice cream flavors. You can have your fruity ones like apricot, banana, or peach. There are the nutty ones with peanuts, walnuts, almonds, or cashews. There are those that taste like pies or cakes. I am sure anything is possible. But in the end it comes down to taste. I certainly wouldn’t mind being one of the tasters at Turkey Hill. I may come across some bad ones but a majority I am sure will end up in a freezer inside of a Turkey Hill box.

  10. Barbara Shaw says:

Please, please do a blueberry cheescake. The only way I can get this flavor is to make my own. Thanks

  11. Jennifer says:

i would reallly love to see oatmea1 cookie icecream, but insted of raisins, chocolate pieces mixed in yummm!

  12. Margaret M says:

I’m all for any new flavors and I would try them all….the only problem would be after trying them, how to decide which flavors to buy. As of now, they are all so good, it takes me forever to pick out which to buy for this week and what will wait until next week!!

  13. Lynn says:

I want you to make one of the best flavor combos in the world (in my opinion) ~ Coffee & Donuts or Jelly Donut! Yum!!

  14. Jacqueline Seewald says:

I love the idea of more variety! I hope you consider doing more fat free or low fat flavors.

As a child, my favorite flavor was maple walnut. I never see it around these days. I’d love a tiramasu as well.

  15. Peggy Gorman says:

I love the limited flavors ,gives me more choices!!

  18. Judi says:

OOOh! that blueberry cheesecake sounded real good. Or raspberry cheesecake. I’m making myself really really ready for some cold, creamy TH. At this point almost any flavor appeals. Sad to say, my local grocery carries only the b asic TH flavors. I’d love to try some of the others if only I didn’t have to travel so far to do it. Note: I don’t really mind a long haul to get some good stuff, but I don’t want it all melted before I get home!

  19. Jan Cis says:

All these flavors sound wonderful. I’d love apple pie, pumkin pie or anything like those. Keep up the good work, and keep sending the vanilla pb to CT. I think I ate it all

  20. Ellen says:

All those flavors sound great Debbie. Cheesecake (any flavor) sounds great too. Also any pie flavor (apple, pumpkin, etc.) yummy, yummy. Who am I trying to kid, any flavor ice cream is yummy.

  21. Kathy says:

Egg Nog and Coconut Cream Pie, yum!

  22. Jeryl says:

I would like to see white chocolate ice cream.

  23. Linda Leffler says:

IMO there are no bad TH flavors, they are all so great, makes it hard to choose, so I just buy one of each. My freezer always has lots of flavors to choose from. Linda

  24. Mary says:

I agree with the white chocolate idea–as I cannot eat regular chocolate. I think one with oatmeal cookies in it would be yummy also!

  25. Cheryl says:

There isn’t a flavor that we don’t like at our house–new flavors are always a treat!

  26. Clara Titus says:

How about a pina colada ice cream?

  27. Debbie L says:

    Great flavors, Debbie!!!

  28. Robin Ames says:

Debbie, your idea about a capppucino flavor with chocolate-covered coffee beans, caramel and whipped cream sounds amazing. Hope they pay you royalties once it’s in the TH line-up! :)

  29. Marcy says:

    Please make Butterscotch, and/or Blueberry
    ice cream!

  30. Marion says:

I wish so much that you would add the chocolate chip malt to your regular line. I don’t even know which month that it is featured!!

  31. Janet Smith says:

As someone watching both cholesterol and weight, I’d like to see more limited edition flavors in frozen yogurt and light ice creams.

  32. BETTY says:

    chocolate marshmellow

  33. Pat says:

I love all the flavors from Turkey Hill!

  34. Donna says:

I just bought some Turkey Hill today and stood looking at all the flavors for a long time before selecting some.

  35. Bert says:

Vanilla, maybe on a wild day chocolate.

  36. Sarah says:

I would love to see a lemon flavor with, perhaps, with bits of candied lemon peel or crushed lemon candies in light or yogurt. Of course, anything with pineapple, cherries, raspberries or cherries would be great in my book. Any one of them mixed into vanilla with little chocolate bits would send me right to the store for a carton.

  37. Joseph says:

I wish all the limited editions would become standards as well

  38. alicelynne says:

I love your coffee ice cream….not a favorite w my kids, so I know there will always be some left for me the in the freezer!!!

  39. Craig Kurtz says:

I have yet to find a Turkey Hill flavor I did not enjoy, bring on the PB&J, it would be another enjoyable treat!!

  40. mary frey says:

    need spooky floavors for halloween

  41. Deb says:

    How about Carmel Apple?

  42. lee carr says:

so glad you have so many ideas for ice cream, love it

  43. Robbin L. Netz says:

Whoever created the “Gertrude Hawk Box of Chocolates” feature flavor should have their salary tripled. I think that is the very best feature flavor of all. To Debbie: That was a really good question.

  44. Nancy N says:

I vote for Debbie’s cappuccino with chocolate covered coffee beans in it, whipped cream, and caramel. However, I think I would prefer chocolate chunks instead of the coffee beans. I love the coffee flavor and so did my nieces and nephews.

  45. Eileen Kite says:

The blueberry cheesecake idea sounds great! I already add raspberry preserves to the chocolate peanut butter and I LOVE the Graham Slam. I think Turkey Hill Ice Cream is the best!

  46. peg says:

No comments on a new flavor. I’ll let your team do that work. I will just buy it and eat it.

  47. Stefanie Schmidt says:

I can’t wait to see what new Turkey Hill flavors come out next. These all sound delicious!

  48. Lauren says:

Good ideas, except I make PB&J with grape jelly!

  49. Linda Barnett says:

As for the PB & J – How about making it a Duetto? One side could be peanut butter (maybe with a pb swirl) & the other could be a fruit flavor like strawberry or grape.

  50. George says:

You want to sell your ice cream then put out coupons in all the Sunday papers and keep the price at @$2.25 for the holidays until after the first week of January. The consumer is looking for a deal and this will give Turkey Hill the results they are lookinf for.
