I agree with lee carr to use the graham slam ice cream and chocolate marshmallow ice cream with oreos as the cookies to crumble in between the layers.

Thinking about flavor combinations that would work so well with this, and also color combinations that would make a great presentation. Various types of crushed cookies adds to the endless possibilities with this. Thanks!
