After the goodies are fed into the mix, the really good stuff is added. This includes marshmallow, peanut butter, fudge and other gooey liquids. These are added through a “ripple tube” to give the goodies a swirl pattern throughout the ice cream. Above, we see Eric adding chocolate fudge to the “fudge hopper.” This machine will, in turn, swirl the fudge into the mix to make Tin Roof Sundae ice cream.
Sorry, you can’t lick the spoon, but our photographer did sample some fudge from the container after it was emptied. By itself, the fudge tastes slightly different than the chocolate fudge you’d get at the grocery store to put on top of ice cream. That’s because the flavor properties of this fudge are meant to be enhanced by the ice cream that surrounds it.

If you’ve got a technical question about the ice cream making process or some other inquiry about the nuances of America’s favorite treat, chances are Ernie has the answer. He might not be able to answer all questions, but he’ll try his best and some may be featured on the Ice Cream Journal.
Chocolate … THE BEST FOOD GROUP!!!
Now you’re “talkin’ turkey,” Turkey Hill, that is! There is nothing better than chocolate.
That looks so good…you can’t go wrong with just chocolate but with all those added goodies, it’s like a little bit of heaven!!

Sounds delicious!
Hubby say the heck with the spoon, he want the barrel to scrape out like the pot from chocolate pudding (which he makes so he gets the pot)
Oh my – The fudge would never make it into the ice cream if that was my job, and I would probably weigh a couple hundred pounds more!
This is making me hungry. It would be cool to see the ripple tube at work. You should have Turkey Hill on “Unwrapped”
That chocolate fudge looks delicious!
YUMMMMMMMMMMMMMMM!!! May we see the peanut butter swirl also???
Not supposed to eat it, but I do sneak some from time to time. I know some friends of mine who would like to climb inside that container!
This could be a messy job but fun. I wonder if Eric goes home and has a nice bowl of Turkey Hill vanilla ice cream. After seeing chocolate all day maybe he needs a break.
Tin Roof Sundae, one of my many favorites. Love the peanuts, fudge swirl….geez, I like everything about it!!!
I can almost taste it here in the office. Great story.
